Asian Orange Chicken
( 4 – 6 servings )
Chicken Ingredients:
- 1kg of boneless, skinless chicken breasts, cut into pieces
- salt and pepper – 2 tablespoons of vegetable oil
- orange sauce
- toppings: thinly sliced green onions, toasted sesame seeds, and orange zest
Orange Sauce Ingredients:
- 3 cloves of garlic, minced
- 1 tablespoon of honey
- 1/4 cup of vinegar
- 1/2 teaspoon of ground ginger
- zest of one orange
- 1/2 cup of orange juice
- 1/3 cup of soy sauce
- 3 tablespoons of cornstarch
- 1/2 teaspoon of white pepper
- pinch of crushed red pepper flakes
Directions:
1) Cut chicken into bite-sized pieces and season them with salt and black pepper.
2) Sauté the chicken in oil until it is nearly cooked through, stirring occasionally ( medium-high heat ).
3) Sauce: whisk all the ingredients together. Pour it in the pan (with the chicken) and stir to combine. Let the sauce come to a boil, then boil for an additional minute or two until thickened.
4) Serve immediately over rice, quinoa, or noodles. Garnish with green onions, sesame seeds, and orange zest.
